This documentary does not really tell us anything we do not know about el Bulli. If you’ve never heard of one of the most influential chefs in the world and his restaurant in Roses, Spain you will not really gain much insight about that here. Either way this documentary’s point is not to introduce an audience to Ferran Adria, one can Google that and find everything they want to know. What it does is focus on the “Cooking in Progress” part and tracks the progress of several recipes from the “lab” or Taller where Adria and his chefs develop recipes all the way to the table of awaiting diners at the restaurant. The film maker does not comment or intrude or ask questions but just observes as Adria and his chefs work on ideas, reject them and refine them until finally the dish is “complete”. I say “complete” because really it never is, even through the service season at el Bulli the dishes are still in progress and are being changed regularly. This really worked for me, but I can see how it might not be everyone’s cup of tea.
